Dr. DAVID KATZ INTERVIEW - Part 1 - NuVal

Catherine came to this country as a teenager and went on to get a Ph.D. in Neuroscience from Princeton, so she is extremely intelligent and highly educated.  We got married; we’ve been married over 20 years.  We have five children and once we had a certain number of kids, Catherine stopped doing science and took over managing our family and has done all of the shopping and all of the cooking all of these years.

I was able to point out back in 2003 at a meeting convened for a group of academics by, then Secretary of Health, Tommy Thompson, that even my wife, even this Ph.D. in Neuroscience with five kids and a nutritionist husband, would come from the supermarket with four loaves of bread and smoke coming out of her ears and say, “If you want the most nutritious one of these you can figure out which one it is, because bread A is the one with the most fiber, but also the one with the most sodium; and bread B has less sodium, but it has added sugar; and bread C doesn’t have the added sugar and the sodium is not bad and it says zero grams trans fat on the front of the package, but it’s the one with partially hydrogenated oil in parentheses in the ingredient list, so it may contain that, although you don’t know for sure; and bread D is a multigrain with amber waves of grain on the packaging, but it has the least fiber of all and you can’t tell if any one of them is a whole grain.”
